Buttery crunchy oatmeal cookie with a delicate sea salt sprinkle, these are cookies that actually have an oat taste. Sometimes they remind people of a bowl of oatmeal. Unlike a lot of bakers, I choose not to overwhelm a natural old-fashioned oat flavor with nutmeg, raisins, cinnamon, allspice, cloves and all the other usual spices you’ll find in most traditional oatmeal cookies. I want you to experience the way oats are supposed to be when accompanied by butter and sugar and flour and eggs. And the real distinguishing feature of these treats is the sea salt sprinkles you taste right after the first bite. The contrast of sweet/salt is mesmerizing.
